Tomato & Strawberry Salad
When strawberries and tomatoes are in season, there is nothing better! This salad is perfect for heatwave weather or as a beautiful centerpiece to any lunch, party or BBQ. We love to serve it with a semi-soft cheese and crusty bread.

Ingredients:
SALAD:
10 vine-ripened tomatoes
1 large punnet fresh Irish strawberries
sea salt
DRESSING:
3 tbsp pink peppercorns
2 tbsp honey
2tbsp lemon juice
150ml light olive oil
Method:
Firstly, make your dressing.
Crush or grind your peppercorns. Add to a bowl with the remaining dressing ingredients and whisk until combined.
This recipe will make more dressing than you need, store the leftovers in a container with a lid for up to 3 months in the fridge. Shake before using.
To make your salad, wash the tomatoes and strawberries and gently pat dry.
Remove the stalks of the tomatoes and cut into slices and season with salt.
Remove the green ends off your strawberries, cut in half or quarters and add to the centre of your platter.
Scatter your tomatoes around the strawberries and drizzle your dressing over.
