At FOXFORD, a celebration is not complete without delicious food to share. This chocolate recipe is quick to make and just perfect for a special night in for two.  We're making it for Valentine's Day but you could recreate for any special meal at home.

 

Makes 2-3 portions

Ingredients:

  • 2 eggs
  • 85g dark cooking chocolate (min 55%)
  • 5g butter
  • 30g caster sugar
  • 100ml cream

 

Method:

  • Lightly whip your cream until it forms soft peaks.
  • Melt your chocolate and butter.
  • Separate your eggs, set the yolks aside.
  • In a clean bowl whisk your egg whites until they are forming soft peaks, gradually add the sugar while still whisking.
  • When the chocolate has melted quickly whisk in the yolks. Using a spatula fold in the cream, until fully incorporated, then gently fold in the meringue. Be gentle so you don’t knock out all the air.
  • Spoon into glasses or cups, pop in the fridge for a couple of hours to set. Serve with some berry compote or a simple espresso to finish off your meal.
