Enjoy another favourite from our cafe menu this bank holiday weekend. Our Bombay Roast Potatoes are a great side to your favourite Saturday night curry, or work beautifully paired with eggs for a savory weekend breakfast.

 

INGREDIENTS:

1kg rooster potatoes

150ml olive oil

Sea salt, to taste

1 tbsp ground cumin

1 tbsp ground coriander

2 tsp turmeric

1 tsp chilli flakes

1 tsp ground ginger

1/4tsp ground cinnamon

1 cardamon pod

1 clove

 

METHOD:

Preheat your oven to 170 degrees fan or gas mark 5

Wash and chop your potatoes into roughly 2cm sized cubes.

Prepare your spice mix by crushing your cardamon pod and clove together and mixing in with your other spices.

Pat your potatoes dry and place them in a large bowl, tossing them into your spice mix. Season with salt, add the olive oil and mix again.

Spread evenly on a roasting tray and roast for 25 -35 minutes until tender on the inside, and crispy on the outside.

Serve warm or at room temperature.
